Diet Lasagna

Ingredients

  • 1 pound grnd round
  • 1/4 minced onion
  • 1 (8 ounce.) tomato puree
  • 1/2 teaspoon basil
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 teaspoon garlic salt
  • Dash pepper
  • 1 (4 ounce.) can mushrooms, liquid removed
  • 1 (4 ounce.) pkg. Mozzarella cheese, cut in strip
  • 1 (10 ounce.) pkg. frzn minced spinach
  • 1 (6 ounce.) container cottage cheese

Directions

  1. Saute/fry beef and onions; drain off fat. Add in puree, basil, parsley, oregano, salt, pepper and mushrooms. Thaw spinach and squeeze out water. Combine spinach and cottage cheese. (May use blender.) In 9 inch square or possibly 7 x 11 inch dish, arrange in layers: spinach mix, meat mix and cheese. Repeat, ending with cheese.
  2. Bake at 375 degrees for 15 to 20 min or possibly till warm and bubbly. Serves 6. Each serving: 3 meat (protein) exchange, 1 vegetable exchange, 2 fat exchanges.
