  1. Preheat oven to 425 degrees. Put yeast in 1/2 c. hot water, set aside. Scald lowfat milk in saucepan then pour lowfat milk in large mixing bowl, add in sugar, salt and cinnamon to lowfat milk. Let cold to lukewarm. Beat egg and add in to mixing bowl mix when lukewarm. Add in yeast and mix, then add in flour and beat till well mixed.
  2. Cover and let rise in hot place till double in bulk (about 1 hour). Place dough well floured board, turn dough over 2 or possibly 3 times to create a ball. Dough should be soft to handle - grease cookie sheet.
  3. Roll dough lightly 1/2 inch thick. Avoid stretching. Cut with doughnut cutter. Place doughnuts 2 inches apart on greased cookie sheet. Brush each doughnut with melted butter - put in preheated 425 degree oven. Bake till golden, 8 or possibly 10 min, remove from oven - brush again with butter and roll in granulated sugar. Makes 15 to 18 doughnuts.
