  • 8 chicken legs and thighs – skin removed
  • Vegetable oil for drizzling
  • For the Coating:
  • 2 cups of flour
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons ketchup
  • 2 tablespoons mustard

Directions

  1. Beat the eggs, ketchup, mustard and milk together and place in a shallow bowl.
  2. Place the flour in a shallow bowl.
  3. Dip the chicken first in the flour, then the egg wash and back in the flour.
  4. Place the chicken in a backing pan and drizzle with the vegetable oil.
  5. Preheat Oven 350 degrees:
  6. Bake 50-55 minutes or until golden and the juices run clear.

      I am going to try this today with panko (in lieu of flour) - Hope I don't change it too much :) ... Actually, I think I'll do it in 2 pans (1 with panko; 1 with flour) ... I love oven fried dishes!
