Ingredients
- 1 x yellow cake mix Fresh coconut, grated in a blender
- 2 c. sugar
- 1 c. lowfat milk (use part coconut lowfat milk if using fresh
- 1 pkt instant vanilla pudding
- 1 c. cool lowfat milk
- 1/4 c. powdered sugar
- 1 x 8 ounce. carton Cold Whip, thawed
Directions
- Bake cake mix as directed on box. Mix sugar and lowfat milk, boil till slightly thickened. Stir in 1/2 coconut. Spoon over cake, making holes in cake with fork to allow filling to soak into cake. Make frosting and spread on cake.
- Sprinkle remaining coconut on top and sides of cake. Chill.
- Frosting: Mix pudding, sugar and lowfat milk. Mix in Cold Whip.
