  • 1 x 3 pound chicken cut up in pcs vegetable oil for frying For the Marinade
  • 1 x onion, minced
  • 1 x bay leaf
  • 1 x stalks young celery, minced
  • 2 clv garlic, crushed
  • 1 Tbsp. parsley, minced
  • 1 tsp dry oregano
  • 1 x juice of a lemon
  • 4 Tbsp. white wine For the Batter
  • 3 ounce flour
  • 1 pch salt
  • 2 Tbsp. extra virgin olive oil
  • 2 x Large eggs
  • 150 ml beer For the Dipping Sauce
  • 1 c. buttermilk
  • 1/3 c. lowfat sour cream
  • 1/2 Tbsp. roasted garlic puree
  • 2 Tbsp. honey
  • 2 Tbsp. canned chipotle juice
  • 3 Tbsp. finely chopped chives
  • 1 Tbsp. lime juice
  • 3 dsh Tabasco
  • 1 pch salt

Directions

  1. Season the chicken pcs and marinate for at least 30 min.
  2. Prepare the batter at least an hour before you want to use it. This allows the batter to relax and coat the chicken better. Put the flour, salt and oil into a mixing bowl. Separate the Large eggs and add in the yolks to the bowl. Pour in the beer, beating the ingredients with a wire whisk. Cover the bowl and set aside for an hour.
  3. To make the dipping sauce, combine all the ingredients in a bowl and whisk them together. Chill till ready to use.
  4. Just before using the batter, beat the egg whites till they form soft peaks. Then fold them gently into the batter mix. Remove the chicken pcs from the marinade and dip them in the batter. Ease them into 8 to 10 centimetres of warm oil, turning them as they brown and cook, about 20 min. Drain on a piece of kitchen paper.
  5. Preparation is medium
  6. Preheat the oil to 350 degrees Fahrenheit (180 centigrade)
