Ingredients

  • 1 pound grnd beef
  • 2/3 c. mayonnaise
  • 1 onion, minced
  • 1/2 c. water
  • 2 c. Bisquick baking mix plus 1/2 c. water
  • 1 c. lowfat sour cream (I use plain yogurt)
  • 1-2 c. shredded Cheddar cheese
  • 1 pkg. taco seasoning
  • 1-2 med. tomatoes, minced
  • 1/2 c. minced green pepper or possibly chilies to taste

Directions

  1. I make a recipe of biscuit dough: 2 c. flour, 3 tsp. baking pwdr, 1/2 tsp. salt, 1/4 c. shortening, and 3/4 c. lowfat milk.
  2. Heat oven to 375 degrees. Brown beef, add in onion, saute/fry, add in taco seasoning and water. Make up biscuit dough. Pat into a greased 9x13 inch pan. Pressing dough 1/2 inch up sides, layer beef, minced tomatoes, green pepper. Mix mayonnaise and lowfat sour cream, pour over top and sprinkle with shredded cheese. Bake till edges are light brown, 25-30 min. Serves 6.
  3. I omit peppers and use fresh green chilies. My family doesn't like spicy foods or possibly green pepper!
