Ingredients
- 1 c. Naturalea Plain Unsweetened lowfat yoghurt
- 1 x telegraph cucumber, grated
- 2 x cloves garlic, chopped (2 to 3)
- 20 x fresh mint leaves, minced finely
- 1 Tbsp. extra virgin olive oil
- 1 x lemon, Juice of
- 1/4 tsp cumin
- 1/2 tsp grnd coriander Salt and pepper
Directions
- Squeeze the grated cucumber in a tea towel to remove the excess liquid.
- Fold in a bowl with all the other ingredients, adding salt to taste.
- Cover and chill until needed. (It is best eaten on the day it is made).
