Dark Sweet Cherry Mojito

The Dark Sweet Cherry Mojito has become my newest obsession and my favorite weekend drink this spring! Frozen cherries that are blended with a little water and splenda and served up with lime juice and rum. Delicious, pretty, and oh so addicting!

We fell in love with mojitos after our very first Caribbean cruise back in 2009. Grumpy and I had taken our first ever real vacation and cruise back then and fell in love with life in the sun and relaxation along with Pina Coladas and Mojitos!

The ingredients are pretty basic. I love to use Captain Morgan’s White Rum in my mojitos. To me it is the best! Because I like to keep sugar content down for beverages I used our sweetener of choice and I love the Dark Sweet Cherries I find in the freezer section of Trader Joes. Normally a little club soda is poured on top of the mojito and I probably would have done so here if I had some however it wasn’t terribly missed in the recipe.

I love to use my NutriBullet for blending together my fruit. It is the most amazing and awesome machine I own (right up there with my little coffee bean grinder!). I put the cherries in the NutriBullet and then add just enough water to barely cover them.

Once the cherries are blended you can strain them into another cup if you wish. I found out that there wasn’t really much to strain so if you skip that step I don’t think it will make much of a difference.

You have to muddle the mint, lime juice, and sugar substitute together in your cocktail shaker.

I use two of my favorite tools for this. My wooden juicer I bought at Williams Sonoma and my Muddler that I bought on another one of our vacations in Boothbay Harbor, Maine. These are essential tools!

Once you have the mint mixture all muddled, you will add your rum and cherry juice then shake and pour! Once poured, this is where you can add a splash of club soda if you wish. I’m still calling it a mojito even though I did not do this. Next time. I promise!

Cherry Mojito Author: Grumpy's Honeybunch Serves: 1 Ingredients

½ cup dark sweet frozen cherries water to just cover cherries, about ¼ cup 2 packets splenda juice of 1 lime (use two limes if the lime is not very juicy) 4-5 mint leaves 2-3 shots white rum depending on strength preference Instructions

Using Nutribullet or blender, blend cherries and water together until fine. Strain juice if desired. In shaker, muddle together mint, splenda, and lime juice. Add ice, cherry juice, and rum. Shake well and strain into glass. Top off with a little club soda if desired and garnish with cherry and mint. Makes 2-3 servings. Feel free to play with the ratio mixture of rum and cherry juice to your taste, Notes Note, nutrition count is for entire recipe. If making 2 servings, divide nutrition count by 2.
