Dan's Chicken and Waffles Recipe

Some years ago I visited Memphis Tennessee and was privilaged to enjoy some real Memphis chicken and waffles. This southern boy fell in love with the dish. Since there were no restaurants near me that served the dish I developed my own. I make this recipe for a week night meal for my wife and I. It's quick and easy.

Ingredients

  • 2 whole boneless chicken breasts, split in half and cut into 1" wide strips.
  • 1-1/2 cups, all purpose flour
  • 2 tsp. sea salt
  • 2 tsp. fresh ground black pepper
  • 1/2 tsp. cayenne pepper
  • 1 tsp. garlic powder
  • 2 tsp. Mrs. Dash Spicy seasoning
  • 1 cup Buttermilk
  • 1 xtra large egg
  • Canola oil for frying the strips
  • Waffles of your choice, Eggo or home made

Directions

  1. Combine the flour, salt, pepper,cayenne pepper,garlic powder,Mrs.Dash seasoning in a 2 quart bowl and set aside.
  2. In a separate bowl combine the buttermilk and the egg. Beat together to combine.
  3. Get a 12" skillet hot with the Canola oil in it. Just to frying temperature. Not too hot or the strips will burn before they are cooked through properly. (160 degrees inside)
  4. Begin by dipping a strip in the egg and buttermilk mixture and dredge into the flour. Add each strip carefully into the hot Canola oil.
  5. Cook the strips until golden browned. Don't crowd the pan. You will have to do several batches before completing all of the strips.
  6. Keep the completed strips on a platter with a paper towel underneath to drain and keep warm in the microwave until you complete all of the strips.
  7. Serve about 3 of the strips for each person along with a waffle with butter and syrup. (see my home made syrup recipe also).
  8. Rest assured you won't have any left overs.
