Ingredients
- 5 lbs. new potatoes
- 1 med. onion, grated
- 4 hard boiled Large eggs, minced
- 2 tbsp. sweet pickle relish
- 2 tbsp. sweet pickle juice
- 1 c. Hellmann's mayonnaise
- 1 tbsp. salad mustard
- Salt and pepper to taste
Directions
- Scrub and dice potatoes, leaving skin on. Boil in lightly salted water till tender. Drain and set aside to cold. In large mixing bowl, combine all remaining ingredients. Add in potatoes, toss, and chill or possibly serve.
