- 1 cups peeled, cubed gold potatoes
- 1/2 tsp kosher salt
- 1 13-ounce can coconut milk
- 1 cup red pepper cut into 1 inch pieces
- 2 cups zucchini cut into 1 inch pieces
- 10 ounces tilapia, cut into 4x2-inch pieces
- 2 TBSP chopped cilantro
