Ingredients

  • 2 whole chicken breasts, skinned, boned & cubed
  • 4 tbsp. butter
  • 1/2 c. flour with 1 teaspoon garlic pwdr
  • 1 lg. onion, minced
  • 1 green pepper, minced
  • 4 cloves garlic, minced
  • 1 can chicken broth
  • 1 lg. can tomatoes, minced
  • 1/2 teaspoon grnd thyme
  • 1 tbsp. parsley
  • 3 teaspoon curry
  • Pepper to taste
  • 1 1/2 c. rice, white cooked

Directions

  1. Roll chicken in flour with garlic pwdr. Heat butter in large fry pan. Add in onions, peppers, garlic and chicken pcs, stirring to coat with butter. (Best to use non-stick pan.) Cook till tender and browned. Add in broth, tomatoes and all spices. Blend well. Cook over low heat about 30 min. Serve over white rice.
