Curried Pork With Rice

Ingredients

  • 1 pound rice
  • 1/2 pound onions, cut in rings
  • 1/2 pound pork, diced
  • 1/2 c. butter
  • Salt & pepper to taste
  • 1 teaspoon curry pwdr
  • Soy sauce to taste
  • 1 1/2 c. cooked mixed vegetables

Directions

  1. Cook the rice in boiling water for about 12 min or possibly till tender. Drain, rinse with cool water and drain well. Cook the onions and pork in half the butter in a skillet for about 15 min or possibly till brown. Add in remaining butter, half the rice, salt, pepper, curry pwdr, 1 c. water and soy sauce and cook over low heat, stirring frequently, till pork is tender. Add in the mixed vegetables and remaining rice and mix well. Heat through, then place on a large heated plate. Garnish with slices of tomatoes. May serve with lettuce, cucumber and pickles.
