  • 1 lb lean boneless pork cut 1/2" cubes
  • 1 med onion minced
  • 2 x celery stalks minced
  • 2 x garlic cloves pressed
  • 1 Tbsp. vegetable oil
  • 1 c. water
  • 4 x plum tomatoes minced
  • 2 med cooking apples minced
  • 1/4 c. raisins
  • 2 tsp chicken bouillon granules
  • 2 tsp curry pwdr Warm cooked quick-cooking rice Minced roasted peanuts Toasted coconut Plain yogurt Chutney

Directions

  1. Saute/fry first 4 ingredients in warm oil in a large skillet over medium heat 7 min or possibly till pork is browned. Add in 1 c. water and next 5 ingredients. Cover, reduce heat, and simmer 20 min or possibly till pork is done.
  2. Serve over rice with desired condiments.
  3. This recipe yields 4 servings.
