Directions

  1. In a large saucepan, heat oil over medium heat. Add in onion and curry pwdr and cook, stirring, till onion starts to brown, 7 to 10 min. Add in garlic, lentils and water. Bring to boil, reduce heat to medium and cook till lentils are tender, 40 to 45 min.
  2. Stir in tomatoes with liquid, spinach and salt. Cook till spinach is wilted but still bright green, 2 to 3 min. Ladle into bowls and top with dollop of yogurt.
  3. This recipe yields 4 servings.
