Ingredients

  • 4 sm Chicken breast halves, bones
  • 3 tsp Vegetable oil
  • 1/4 tsp Salt
  • 1/8 tsp Grnd red pepper
  • 1 med Unpeeled green apple, choppe
  • 1 med Onion, minced
  • 1 cl Garlic, finely minced
  • 2 tsp Curry pwdr
  • 2 tsp Orange peel, grated
  • 1 c. Chicken broth or possibly water
  • 1/4 c. Raisins
  • 1 Tbsp. Cornstarch
  • 1/4 c. Cool water
  • 3 Tbsp. Minced fresh parsley
  • 1 Tbsp. Orange peel, grated
  • 4 c. Warm cooked rice

Directions

  1. Chicken into 1" pcs. Heat 2 teaspoon oil in 10" skillet over med. heat. Cook chicken, salt and red pepper in oil about 5 minutes., stirring occasionally, till chicken is no longer pink in center; remove chicken from skillet. Add in remaining 1 teaspoon oil, the apple, onion, garlic, curry pwdr, and 2 teaspoon orange peel to skillet. Cook over med. heat about 7 minutes., stirring occasionally, till apple is tender. Stir in broth, raisins and chicken.
  2. heat to boiling, stirring constantly. Mix cornstarch and water; stir into chicken mix. Heat to boiling, stirring constantly. Boil and stir 1 minutes.
  3. Stir parsley and 1 Tbls. orange peel into warm rice; serve with chicken.
