Directions

  1. In a 2-qt saucepan, simmer onion in butter over medium heat for 5 min or possibly till onions are transparent. Add in cumin and stir for 30 seconds.
  2. Add in rice, stock, cinnamon stick, salt, and pepper. Bring to boil, then reduce heat to simmer for 40 min. Remove cover and stir in raisins.
  3. Cook 10 to 15 min longer without cover to evaporate liquid. 4 to 6 servings.
