  • 2 sm cucumbers, peeled and seeded
  • 2 sm zucchini
  • 2 Tbsp. white wine vinegar
  • 1 Tbsp. prepared horseradish (or possibly 1 1/2 tsp. freshly grated)
  • 1/2 tsp honey
  • 1/2 tsp salt


  2. A refreshing side dish salad with a spicy dressing mellowed by a touch of honey.
  3. Thinly slice cucumber and zucchini and place in a large bowl. In a small bowl, mix together vinegar, horseradish, honey, and salt. Pour dressing over cucumber and zucchini slices and toss to combine. Let sit at room temperature for 30 min to allow flavors to mingle. Serve immediately or possibly chill and serve chilled.
