  • ripe tomatoes minced onions minced green peppers minced cucumbers peeled and minced salt optional nonfat plain yogurt

Directions

  1. You chop up garden-ripe tomatoes, onions, green peppers and peeled cucumbers (in whatever amounts you wish). It's best if you salt them and let them drain a bit in a colander, but if you're avoiding salt, you can skip this step. Next, you stir in some plain nonfat yogurt. You can drain the yogurt a little first, especially if you didn't salt and drain the veggies. Which's it, no other seasonings. It is so refreshing, and the taste of the garden-fresh vegetables is fantastic with the cold yogurt dressing. Try it.
  2. NOTES : This is my favorite late-summer salad. It's a middle-eastern recipe and is simple and fat free.
