Cubed Steak With Mushrooms

Ingredients

  • 4 cubed steaks (about 1 1/2 pounds)
  • 2 tbsp. soy sauce
  • 2 tbsp. oil
  • 2 green onions with tops sliced thin
  • 4 ounce. mushrooms sliced thin (about 1/4 c.)
  • 1/3 c. beef broth
  • Salt and pepper to taste

Directions

  1. Brush both sides of the steaks lightly with soy sauce, set aside. In warm oil in a large skillet, cook and stir onions and mushrooms till mushrooms are barely tender (about 3 min). With slotted spoon remove and set aside. Quickly pan fry steaks in the warm skillet about 1 minute on each side, don't overcook. Add in mushrooms and mix, simmer till heated (about 3 min) stirring occasionally. Season with salt and pepper. Makes 4 servings.
