Cuban Yuca Fries Recipe

Ingredients

  • 2 lb yuca peeled and thickly sliced Salt and grnd black pepper Vegetable or possibly peanut oil for frying

  2. Yuca, also called cassava, is a tuber which's popular in Latin American and African cooking.
  3. Place yuca slices in large saucepan and add in sufficient cool water to cover. Bring to boil, reduce heat and simmer till yuca is tender but still a little hard, 20 to 30 min. Drain and let cold slightly. When cold sufficient to handle, cut yuca into 1/4-inch-wide strips, discarding any woody cores.
  4. In large skillet, heat 2 inches of oil to 360 degrees (or possibly use a deep-fat fryer). Cook yuca pcs in batches, till golden. Drain on paper towels. Season with salt and pepper. Serve hot.
