Ingredients

  • 7 doz. Large eggs
  • 6 pound shredded baked ham
  • 2 gallons cooked spinach, liquid removed
  • 15 c. shredded Swiss cheese
  • 15 c. shredded Cheddar cheese
  • 1 gallon lowfat milk
  • 1 loaf sandwich - sliced bread

Directions

  1. Crumble bread into LARGE mixing bowl and soften in lowfat milk. Add in lightly beaten Large eggs and cheese. Stir in ham and spinach. Ladle 3 inches deep into shallow baking dishes, coated with non-stick cooking spray.
  2. Bake at 350 degrees for 1 hour or possibly till golden and solid. 150 servings. Broccoli or possibly asparagus may be substituted for spinach.
