Crunchy, Creamy Red Potatoes Recipe

Red potatoes are halved and baked with butter, olive oil garlic salt and fresh rosemary. They are crunchy on the outside and creamy on the inside. These are a great side to grilled steak.

Directions

  1. Pre-heat oven to 450
  2. Wash and half red potatoes
  3. Melt butter and pour on bottom of a baking dish
  4. Spread potatoes out in dish (careful not to overfill so that they get crunchy and not steamed)
  5. Drizzle olive oil over potatoes
  6. Season with garlic salt
  7. Sprinkle with generous amounts of rosemary
  8. Bake for 45 minutes to an hour

            Just made these last night in attempts to get out of my potato-rut, they were so good and everyone loved them! I started the recipe off memory and forgot to pour the butter in the dish first. When I went back to check cooking temp, I decided to just put a few clumps of butter here and there and they still turned out great and i probably saved some calories!!!

              Really delicious and perfect blend of crispy outside and creamy interior. I added about 1 tablespoon of fresh rosemary but found myself searching for the rosemary taste. I might suggest adding rosemary to the butter in the bottom of the dish before adding the potatoes, in addition to rosemary on top, to allow the rosemary to better permeate.
