Beat the kitchen heat this summer with this tasty and healthy Asian-style chicken salad with a little help from Birds Eye® Protein Blends and Tyson® Grilled & Ready Chicken Breast!

Avoiding heating the kitchen is a major priority for me in the summertime. I'm always on the lookout for things that cook quickly on the stovetop or better yet, the microwave.

Summer is also a time when most of us eat "lighter" because of the heat, so it's also a perfect time to eat healthier too. It just seems to go hand-in-hand!

One of the healthiest proteins around is skinless chicken breast which is why I simply love the convenience of Tyson's Grilled & Ready Chicken Breast. It's 100% white meat, ready in a jiff from your microwave and it tastes great too.

On my last shopping trip to my local Walmart, I saw they had a some new varieties of Birds Eye veggies--Steamfresh with added protein. I like to try new things and was pleased to see there was an Asian variety--and I love anything Asian!

Perfect combo for a healthy dinnerAll of the Birds Eye Protein Blends are convenient to prepare too--just pop the whole bag in the microwave. Can't get easier than that and the added protein makes it a complete and nutritious meal even if you eat it alone!

I thought combining the Asian Protein Blend with some Tyson Grilled & Ready would make a healthy and nutritious salad that was not only delicious, but filling too.

Eat warm or chilledSince the Asian-style veggies have a distinctive ginger essence to them, I made a quick honey soy dressing to go on the salad. The flavor combination is totally delicious! And the best part is this is all "cooked" in your microwave and is ready quickly.

Perfect dressing for the saladFor some crunch, I added some chow mein noodles. I chose to chill this salad, but it's equally nice warm.

Crunchy Asian Chicken Salad

*Regular may be substituted

Mix all Honey Soy Dressing ingredients in a small bowl. Place in refrigerator and chill about 1 hour.

Microwave Tyson Grilled & Ready Chicken Breast Fillets per package directions.

Microwave per package instructions

Slice in 1/2-inch slices; set aside.

Microwave Birds Eye Steamfresh Asian Protein Blend per package directions.

After standing time, place vegetable blend on a serving platter, spreading it in a thin layer.

Place half of the chow mein noodles over veggie blends. Place chicken breast pieces on top then sprinkle with remaining chow mein noodles. Top with chives.

Cover and chill at least one hour.

Serve with dressing on the side so diners may add their own dressing to the salad.

May also be eaten warm if desired--omit refrigeration then and serve immediately.

Serves 4.
