Ingredients

  • 1 lb cod fillets thawed if necessary Melted butter or possibly margarine
  • 1/4 c. fine dry bread crumbs
  • 1 Tbsp. minced parsley
  • 1/8 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 1/8 tsp paprika Lemon wedges

Directions

  1. Cut cod into serving-size pcs. Coat on all sides in about 3 Tbsp. melted butter. Place in baking dish.
  2. Combine bread crumbs, parsley, seasonings and 1 Tbsp. melted butter. Sprinkle crumb mix over cod.
  3. Bake at 450 degrees 8 to 10 min or possibly till cod flakes easily when tested with a fork. Serve with lemon wedges.
  4. This recipe yields 4 servings. Recipe may be halved.
