  • 2 1/2 ounce semisweet chocolate
  • 5 ounce mascarpone - (abt 1 c.)
  • 1/8 tsp almond extract
  • 1 lrg loaf pan-baked panettone or possibly brioche
  • 3 x Large eggs
  • 1/4 c. granulated sugar
  • 2 tsp pure vanilla extract
  • 2 1/2 c. heavy cream
  • 2 Tbsp. unsalted butter - (to 3) Powdered sugar for garnish

Directions

  1. Chop the chocolate into small bits and set aside.
  2. Mix together the mascarpone and almond extract and set aside.
  3. Cut the panettone or possibly brioche into 16 equal slices discarding the ends. Remove the crust squaring the slices off as much as possible. Lay 8 slices of brioche out on the work surface. Spread the mascarpone mix on the slices, then sprinkle over the chocolate bits. Cover with the remaining slices of brioche to create sandwiches. You may wrap the sandwiches up in plastic film and chill for a few hrs or possibly proceed with recipe.
  4. In a mixing bowl, whisk together the Large eggs, sugar, vanilla, and 1 1/2 c. of the heavy cream. Set aside. Whip the remaining c. of heavy cream into stiff peaks, cover, and chill till ready to use.
  5. Heat 1 Tbsp. of butter in a large nonstick skillet over moderate heat. Dip each sandwich into the egg mix to saturate the bread allowing any excess to drip back into the bowl. Transfer to the skillet. Dip and add in only as many sandwiches as fit into the skillet in 1 layer.
  6. Saute/fry gently till the bottom is golden brown, about 3 min. With a spatula turn the sandwiches and continue to saute/fry till the second side is golden brown and the chocolate in the center has melted.
  7. Transfer the sandwiches to a hot platter as they are done. Add in more butter to the skillet and continue to dip the sandwiches in the egg mix and saute/fry them till all the sandwiches are cooked.
  8. Serve the sandwiches on individual dessert plates and garnish with a dollop of whipped cream and a dusting of confectioners' sugar.
  9. This recipe yields 8 servings.
