Ingredients

  • 4 x chicken breasts
  • 2 can chicken broth
  • 1 c. water
  • 3 x cubes chicken bouillon
  • 1 sm carrot minced
  • 1 sm celery rib minced
  • 1 x onion minced
  • 12 lrg flour tortillas

Directions

  1. Combine all ingredients in crockpot, except tortillas. Cook on LOW 8 to 10 hrs.
  2. Take out chicken and remove skin and bones, place broth on stove in large pot. Cut chicken into bite-size pcs and return to broth. Bring to slow boil (medium to medium-high).
  3. Cut tortillas in half, then into 1-inch strips. Place strips into broth and boil gently for 15 to 20 min, stir occasionally. Broth should thicken, but if too thin, combine 1 Tbsp. cornstarch with sufficient water to dissolve and stir into dumplings. Allow to cook 5 - 10 min more.
  4. This recipe yields 4 servings.
