  • 3 lbs. Boston butt pork, cut in one inch cubes
  • marinade:
  • 1/2 cup olive oil
  • juice of 1 lemon
  • 1/2 tbs. Mexican oregano
  • 2 tbs. Tex-Mex Diablo Dust or taco seasoning
  • 1 tbs. vinegar
  • 2 cloves chopped garlic or 1 tsp. garlic powder.
  • 1 recipe chile colorado or red chile gravy

Directions

  1. Prepare marinade and add pork cubes to it in a bowl or plastic bag.
  2. Refrigerate 4-8 hours.
  3. Discard marinade.
  4. Turn on crockpot.
  5. Prepare red chile sauce of choice, or use 2-3 cups store-bought enchilada sauce.
  6. Put all ingredients in crock pot and cook until pork is tender.
  7. To thin sauce, add chicken stock.
  8. To thicken add cornmeal.
