Croatian white onion sauce Recipe

Traditional and delicious Croatian sauce that goes well with all kinds of cooked meat.
Note: Do not omit or substitute wine vinegar with any other vinegar. Cooked onions taste somewhat sweet, and vinegar gives the sauce just the right taste balance. Alcohol, cider or balsamic vinegar are not a good option because they would completely change the distinctive taste of the sauce.

Directions

Peel the onion, then cut it into quarters. Put the onion in a saucepan and add water. Cover and bring to the boil. Simmer until quite tender, about 15-20 minutes. Or Cook the onion, together with in water, in a microwave oven at MAX for 10 minutes or until quite tender.

Transfer the cooked onion and the remaining liquid to the blender and puree.
3.
In a small saucepan gently heat the oil; add the flour and mix thoroughly and carefully in order to make a light roux.
4.
Add the onion puree, cook for 2 minutes, stirring occasionally. If the sauce is too thick, add some water until you obtain the desired consistency.
5.
Stir in salt and wine vinegar and remove from the heat.
