I was recently invited to share a Croatian recipe as part of the World On A Plate challenge, which is being run by the travel company Expedia. I’m always up for a challenge and I love international food (sweeping statement of the day…), so I set about looking for a vegetarian Croatian recipe to share.
I went to Croatia years ago (back in 2008, in fact), but since we were taking a cruise along the coast and only stopping in small fishing towns, there was a major focus on seafood, which isn’t much good for a vegetarian. However I knew that Croatia must have plenty of wonderful vegetarian dishes too, and when I stumbled across soparnik, I knew it was perfect!

,%20so%20I%20set%20about%20looking%20for%20a%20vegetarian%20Croatian%20recipe%20to%20share.%3C/p%3E%3Cp%3EI%20went%20to%20Croatia%20years%20ago%20(back%20in%202008,%20in%20fact),%20but%20since%20we%20were%20taking%20a%20cruise%20along%20the%20coast%20and%20only%20stopping%20in%20small%20fishing%20towns,%20there%20was%20a%20major%20focus%20on%20seafood,%20which%20isn%E2%80%99t%20much%20good%20for%20a%20vegetarian.%20However%20I%20knew%20that%20Croatia%20must%20have%20plenty%20of%20wonderful%20vegetarian%20dishes%20too,%20and%20when%20I%20stumbled%20across%20soparnik,%20I%20knew%20it%20was%20perfect!%3C/p%3E%3Cp%3ESoparnik%20is%20known%20as%20a%20Croatian%20version%20of%20pizza,%20but%20really%20it%E2%80%99s%20more%20like%20a%20pie,%20with%20dough%20on%20the%20top%20and%20bottom.%20It%E2%80%99s%20traditionally%20filled%20with%20swiss%20chard,%20but%20I%20used%20kale%20instead,%20since%20it%E2%80%99s%20one%20of%20my%20favourite%20vegetables%20at%20the%20moment%20(I%20sure%20do%20love%20a%20good%20food%20trend%E2%80%A6).%20So%20if%20%E2%80%98soparnik%E2%80%99%20sounds%20too%20exotic%20for%20you,%20just%20think%20of%20this%20as%20kale%20pie,%20and%20you%E2%80%99ll%20feel%20right%20at%20home.%3C/p%3E%3Cp%3EThe%20soparnik%20was%20really%20easy%20to%20make.%20For%20the%20dough,%20I%20used%20the%20same%20recipe%20as%20I%20used%20for%20my%20cheese%20and%20onion%20stuffed%20flatbreads,%20which%20I%20shared%20back%20in%20September.%20I%20raved%20about%20how%20easy%20the%20dough%20was%20at%20the%20time,%20and%20it%20proved%20itself%20once%20again%20%E2%80%93%20no%20holes%20poked%20by%20fingers,%20no%20sticking%20to%20the%20worktop,%20no%20nothing,%20just%20a%20really%20user-friendly%20dough!%20Fill%20it%20with%20a%20mixture%20of%20kale,%20onions,%20garlic%20and%20fresh%20parsley,%20and%20you%20get%20a%20wonderfully%20comforting,%20yet%20relatively%20healthy%20and%20relatively%20authentic%20Croatian%20kale%20pie!%3C/p%3E%3Cp%3EIn%20case%20you%20needed%20any%20more%20reassurance%20about%20just%20how%20forgiving%20this%20recipe%20is,%20here%E2%80%99s%20what%20my%20kale%20pie%20looked%20like%20before%20it%20went%20in%20the%20oven:%3C/p%3E%3Cp%3Ei.e.%20a%20bit%20of%20a%20mess.%3C/p%3E%3Cp%3EIn%20fact%20it%20doesn%E2%80%99t%20even%20look%20too%20special%20when%20it%20comes%20out%20of%20the%20oven%20either%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6but,%20chop%20it%20up%20into%20the%20traditional%20diamond%20shape,%20and%20it%20suddenly%20goes%20from%20%E2%80%98strange%20slab%20of%20dough%E2%80%99%20to%20%E2%80%98beautifully%20rustic%20pie%E2%80%99.%3C/p%3E%3Cp%3EI%20drizzled%20mine%20with%20a%20little%20extra%20virgin%20olive%20oil%20to%20add%20an%20extra%20bit%20of%20Mediterranean%20flair.%3C/p%3E%3Cp%3EI%E2%80%99ll%20definitely%20be%20keeping%20an%20eye%20out%20for%20soparnik%20if%20I%E2%80%99m%20ever%20in%20Croatia%20again,%20and%20I%E2%80%99d%20also%20100%25%20recommend%20visiting%20the%20country!%20Absolutely%20stunning%20coastline,%20interesting%20cities,%20and%20spectacular%20scenery%20(and%20lovely%20kale%20pie!).%3C/p%3E%3Cp%3ECroatian%20soparnik%20(kale%20pie)%20%20%20%20%20Prep%20time%20%201%20hour%2020%20mins%20%20%20Total%20time%20%201%20hour%2040%20mins%20%20%20%20%20%20Author:%20Becca%20@%20Amuse%20Your%20Bouche%20Recipe%20type:%20Light%20lunch%20Yield:%204-6%20%20%20Ingredients%20For%20the%20dough:%3C/p%3E%3Cp%3E300g%20(~2%20cups)%20plain%20flour,%20plus%20more%20for%20dusting%201%20tbsp%20olive%20oil%20Salt%20Black%20pepper%20~150ml%20(~2/3%20cup)%20water%20For%20the%20filling:%3C/p%3E%3Cp%3ELarge%20handful%20kale%20(or%20similar%20green%20vegetable)%201%20onion,%20finely%20diced%203%20cloves%20garlic,%20minced%204tbsp%20fresh%20parsley,%20chopped%201tbsp%20olive%20oil%20Salt%20Black%20pepper%20Extra%20virgin%20olive%20oil,%20to%20serve%20(optional)%20%20%20Instructions%3C/p%3E%3Cp%3EAdd%20the%20plain%20flour,%20olive%20oil%20and%20salt%20and%20pepper%20to%20a%20large%20mixing%20bowl.%20Gradually%20adding%20the%20water,%20knead%20the%20mixture%20with%20clean%20hands%20until%20it%20comes%20together%20into%20a%20dough.%20The%20dough%20should%20be%20moist%20but%20not%20overly%20sticky,%20so%20you%20may%20not%20need%20all%20of%20the%20water%20(or%20you%20may%20need%20a%20dash%20more!).%20Continue%20to%20knead%20for%20a%20few%20more%20minutes,%20until%20the%20dough%20is%20fairly%20elastic.%20Place%20the%20ball%20of%20dough%20into%20a%20lightly%20oiled%20bowl,%20and%20cover%20with%20a%20tea%20towel.%20Leave%20to%20rest%20for%201%20hour.%20While%20the%20dough%20is%20resting,%20prepare%20the%20filling.%20Remove%20any%20tough%20stems%20from%20the%20kale,%20and%20chop%20the%20leaves.%20Add%20the%20finely%20diced%20onion,%20garlic%20and%20parsley,%20along%20with%20a%20tbsp%20of%20olive%20oil%20and%20a%20touch%20more%20salt%20and%20pepper.%20Mix%20well,%20and%20set%20aside.%20When%20the%20dough%20has%20rested,%20transfer%20it%20to%20a%20lightly%20floured%20surface.%20Divide%20the%20mixture%20in%20two,%20and%20roll%20the%20first%20s
