Ingredients
- 1/2 lb Thick bacon slices
- 3 Tbsp. Extra virgin olive oil
- 2 1/2 x Onions - minced
- 3 x Garlic cloves - crushed
- 5 lrg Tomatoes - peeled, seeded, minced
- 1 Tbsp. Dry tarragon
- 1/4 tsp Red pepper flakes Salt and pepper
- 4 Tbsp. Parsley - minced
- 1 lb Fettucine Parmesan cheese
Directions
- Directions: Fry the bacon till crisp and drain on paper towels. Pour out excess fat from pan, except 1 Tbsp. and add in the extra virgin olive oil to pan. Add in onions and saute/fry about five min, then add in garlic and tomatoes. Simmer for a few min and then add in the tarragon, red pepper flakes, salt and pepper. Simmer for another half an hour, stirring occasionally. Add in parsley and simmer for five min.
- Crumble bacon and stir into sauce. Pour sauce over pasta and mix. Top with parmesan cheese.
