Ingredients

  • 2 x 14 ounce. cans white beans
  • 2 x 14 ounce. cans garbanzo beans, liquid removed
  • 2 x 14 ounce. cans red kidney beans, liquid removed
  • 1/4 lb Green beans
  • 1 c. Arugula, minced
  • 1 x Cucumber, diced
  • 1/4 c. Basil leaves
  • 2 Tbsp. Dijon mustard
  • 1/4 c. Extra virgin olive oil
  • 1/2 c. Lemon juice

Directions

  1. Directions: In a small bowl, whisk together the mustard, oil and lemon juice. Add in remaining ingredients and season with salt and pepper.
