%3C/p%3E%3Cp%3EWhat's%20surprising%20is%20that%20it's%20Gouda,%20a%20cheese%20I've%20never%20been%20particularly%20taken%20with%20until%20I%20tasted%20Beemster's%20gourmet%20flavors.%20They%20sent%20me%20their%20mustard%20cheese,%20which%20is%20a%20creamy,%20soft%20cheese%20with%20mustard%20seeds;%20Vlaskaas,%20a%20buttery,%20sharp%20cheese;%20and%20their%20Extra%20Aged%20flavor,%20also%20known%20as%20my%20new%20husband.%20IT'S%20SO%20SHARP.%20They%20describe%20it%20as%20having%20butterscotch%20notes,%20which%20is%20totally%20accurate.%20I%20can%20FEEL%20the%20taste%20rich%20and%20sharp%20in%20the%20back%20of%20my%20throat%20like%20a%20lingering%20%22r%22%20I%20swallowed%20long%20ago%20in%20a%20high%20school%20French%20class.%20What%20I'm%20trying%20to%20say%20is%20that%20you%20need%20it.%3C/p%3E%3Cp%3EAnd%20you%20need%20to%20make%20these%20crispy,%20buttery%20cheese%20pastries%20with%20it!%20And%20then%20you%20need%20to%20invite%20me%20over.%20It's%20MY%20husband,%20after%20all.%3C/p%3E%3Cp%3EOne%20year%20ago:%20Hot%20Blueberry%20Cake%20with%20Vanilla%20Ice%20Cream%3C/p%3E%3Cp%3ETwo%20years%20ago:%20French%20Silk%20Pie%20Bars%3C/p%3E%3Cp%3E2%20sheets%20prepared%20puff%20pastry,%20thawed%204%20tablespoons%20butter%201/4%20cup%20white%20wine%202%20tablespoons%20stone-ground%20mustard%20(optional)%20flour%20for%20dusting%20counter%202%20cups%20finely%20shredded%20Beemster%20X-O%20(Extra%20Aged)%20Cheese%201%20egg,%20beaten%20lightly%20with%201%20teaspoon%20water%20(for%20egg%20wash)%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F%20and%20line%20two%20baking%20sheets%20with%20parchment%20paper.%20In%20a%20small%20saucepan,%20heat%20the%20butter%20and%20wine%20together%20over%20medium-high%20heat%20until%20the%20butter%20is%20completely%20melted%20and%20the%20mixture%20has%20come%20to%20a%20brief%20boil,%20whisking%20frequently.%20Whisk%20in%20mustard%20if%20using.%20Set%20aside.%20Lightly%20dust%20the%20counter%20with%20flour%20before%20gently%20rolling%20out%20one%20of%20the%20thawed%20puff%20pastry%20sheets.%20You%20want%20the%20rectangle%20to%20be%20just%20slightly%20bigger%20and%20the%20seams%20to%20be%20rolled%20smooth.%20Pour%20about%20half%20of%20the%20melted%20butter%20mixture%20over%20the%20pastry%20and%20spread%20it%20evenly%20over%20the%20surface.%20Sprinkle%20half%20of%20the%20cheese%20over%20the%20surface%20evenly.%20Gently%20roll%20the%20puff%20pastry,%20starting%20from%20the%20long%20edge,%20into%20a%20tight%20log.%20Use%20a%20sharp%20knife%20to%20cut%20the%20resulting%20log%20into%203/4-inch%20thick%20spirals.%20Lay%20these%20on%20the%20prepared%20baking%20sheets.%20Repeat%20this%20process%20with%20the%20remaining%20puff%20pastry%20sheet.%20Brush%20each%20spiral%20with%20egg%20wash%20and%20bake%20for%20around%2015%20minutes%20or%20until%20the%20pastry%20is%20golden%20and%20the%20cheese%20is%20bubbly.%20Cool%20completely.%20%203.2.2925%3C/p%3E){kind=link}
