Ingredients

  • 1 c. shortening
  • 2 Large eggs
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 teaspoon vanilla
  • 1 1/2 c. flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 (12 ounce.) bag chocolate chips
  • 2 c. flaked coconut
  • 3 c. oatmeal

Directions

  1. Cream shortening, sugar, Large eggs and vanilla. Add in flour, salt, soda and spices, mixing well. Add in chocolate chips, coconut and oatmeal. Mix will be very stiff. Mix well with large spoon. Drop onto cookie sheet or possibly form into rolls about 2 inches in diameter and wrap in wax paper.
  2. Refrigerateseveral hrs or possibly overnight. Cut roll into 1/2 inch slices. Bake at 350 degrees for 13-15 min till delicately browned. Makes approximately 5-6 dozen.
