  • 1 x Turkey Carcass With About 2 C Meat On
  • 1/4 c. Salad Oil
  • 1/2 c. All-Purpose Flour
  • 3 med Celery Stalks, Thinly Sliced
  • 2 med Onions, Minced
  • 1 lrg Green Pepper, Diced
  • 11 c. Water
  • 2 tsp Salt
  • 1 tsp Thyme Leaves
  • 3/4 tsp Warm Pepper Sauce
  • 1 can (14 1/2 To 16 Ounce) Tomatoes
  • 1 c. Regular Long Grain Rice
  • 1 pkt (10 Ounce) Frzn Cut Okra

Directions

  1. Cut the turkey meat into bite-sized pcs; cover and chill. With kitchen shears, cut the carcass into several pcs; set aside. In 8-quart.
  2. Dutch Oven, over medium heat, into warm salad oil, stir flour; cook, stirring constantly, till flour is brown but not burned. Add in celery, onions, and green peppers to Dutch oven; cook till vegetables are tender, stirring frequently. Add in carcass, water, salt, thyme, and warm pepper sauce; heat to boiling. Reduce to low; cover and simmer 45 min, stirring occasionally. Remove carcass from broth, throw away. To broth mix remaining in the Dutch oven, add in the tomatoes with their liquid, rice and frzn okra, stirring to break up tomatoes; over high heat, heat to boiling. Reduce heat to low; cover and simmer broth for 20 min or possibly till rice and okra is tender, stirring occasionally. Add in cut-up turkey meat; heat. Skim fat from liquid in Dutch oven.
