Creamy Turkey Basil Pasta

Ingredients

  • 1 tbsp. minced fresh basil
  • 1/8 teaspoon garlic pwdr
  • 1/8 teaspoon dry mustard
  • 2 tbsp. egg substitute
  • 1 teaspoon lemon juice
  • 1/4 c. extra virgin olive oil
  • 2 tbsp. non-fat yogurt
  • 2 c. cooked rotini noodles (cooked without salt or possibly fat)
  • 1 c. fresh broccoli flowerettes
  • 1 c. cubed minced tomato
  • 2 tbsp. sliced green onions
  • 1/4 teaspoon salt

Directions

  1. Combine first 5 ingredients in container of an electric blender or possibly food processor. Process 20 seconds. With motor running, gradually add in extra virgin olive oil in a slow, steady stream. Add in yogurt (at room temperature) and process 5 seconds. Set aside.
  2. Combine rotini noodles and remaining ingredients; add in dressing and toss gently. Cover and chill. Yield: 4 servings (285 calories per 1 1/4 c. serving).
