Creamy Spinach Parmesan Soup

Ingredients

  • 1 (10 ounce.) pkg. frzn minced spinach
  • 2 tbsp. butter
  • 1 sm. onion, finely minced
  • 2 c. Half and Half
  • 2 tbsp. flour
  • 1/4 teaspoon thyme
  • 1/2 teaspoon celery salt or possibly salt
  • 1/8 teaspoon nutmeg
  • 1 c. chicken broth
  • 1/4 c. Parmesan cheese
  • Croutons

Directions

  1. Cook spinach and onion in butter. Add in chicken broth. Puree in blender or possibly food processor. Add in Half and Half, flour, thyme, salt and nutmeg. Heat on medium heat about 20 min. Sprinkle with Parmesan cheese, stir. Heat thoroughly, about 5 min. Serve with croutons. Serves 4.
