Ingredients

  • 2 Tbsp. butter
  • 1 lrg spinach bunch - washed liquid removed, and minced
  • 1/2 x fresh garlic clove finely chopped
  • 1/2 c. heavy cream
  • 3 Tbsp. grated Parmesan cheese (freshly grated is best)

Directions

  1. Heat large skillet to medium-high (350 degrees for electric skillet.) Add in butter and heat; then quickly add in garlic and allow to brown for 1 minute. Add in the spinach, reduce heat to medium, and cook, uncovered, till it wilts and much of the juices evaporate. Depending on the moisture of the spinach, it'll exude quite a bit of liquid. Cook it down till there's a about 2 to 3 Tbsp. of liquid left.
  2. Add in the heavy cream and cook down for a one to two min. Sprinkle in parmesan and mix. (If mix is still a bit thin, allow the parmesan a few min in the skillet. It has good thickening power of its own.)
  3. This recipe yields 4 servings;
  4. Comments: If you are not a garlic fan, skip it, and replace it with 1/2 tsp. lemon zest for a very fresh taste which complements the parmesan quite well.
