Directions

  1. Cook tortellini as directed on package. Drain; rinse with warm water.
  2. Meanwhile, in large skillet over medium heat cook onion and garlic in oil till lightly browned, about 5 min. Add in spinach, tomato, basil, salt and pepper; cook 5 min, stirring occasionally.
  3. Stir in cream and cheese; cook till mix just comes to a boil. Reduce heat to low. Add in tortellini; mix well. Cook 4 or possibly 5 min more. Serve with additional cheese. 4 servings.
