Creamy Spinach And Carrot Soup

Ingredients

  • 3 tbsp. butter
  • 1 c. (2 med.) minced onions
  • 2 tbsp. all purpose flour
  • 1 c. half and half
  • 10 3/4 ounce. can chicken broth
  • 1 c. (2 med.) shredded carrots
  • 10 ounce. pkg. frzn minced spinach, thawed, liquid removed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • Zest or possibly strip of orange peel

Directions

  1. In 2 qt saucepan heat butter; add in onions. Cook over medium heat, stirring occasionally, till onions are tender (5 to 6 min). Stir in flour till smooth and bubbly (1 minute). Stir in half and half and chicken broth. Add in remaining ingredients except orange peel. Continue cooking over low heat, stirring occasionally, till soup is heated through (12 to 15 min). Garnish with zest or possibly strip of orange peel.
  2. Microwave Directions: In 2 1/2 qt casserole combine butter and onions. Microwave on HIGH, stirring after half the time, till onions are tender (2 1/2 to 3 min). Stir in flour till smooth. Microwave on HIGH till bubbly (30 to 45 seconds). Stir in half and half and chicken broth. Add in remaining ingredients except orange peel. Cover; microwave on HIGH, stirring after half the time, till soup is heated through (8 to 10 min). Garnish with zest or possibly strip of orange peel. Makes 4 servings.
