Creamy Sour Cream Raisin Pie

Ingredients

  • 1 c. raisins
  • 1/4 c. cornstarch
  • 1/2 teaspoon cinnamon
  • 2 c. lowfat milk
  • 3/4 c. sugar
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 egg yolks, beaten
  • 1 c. lowfat sour cream
  • 1 tbsp. lemon juice
  • Baked pie shell
  • Whipped cream

Directions

  1. Mix raisins, cornstarch, cinnamon, lowfat milk, sugar, nutmeg and salt. Bring to a boil for 1 minute. Beat egg yolks and lowfat sour cream and add in to cooked mix. Cook till bubbly. Add in lemon juice and cold slightly. Spoon into pie crust. Cover and refrigerate3 hrs or possibly more. Cover with whipped cream or possibly whipped topping.
  2. Or possibly make a meringue with the 3 egg whites left over from yolks. Put egg whites in bowl and whip till stiff with 3 Tbsp. sugar. Spread over pie filling. Brown in a 400 degree oven about 10 min. Watch carefully so it doesn't burn. Refrigeratetill pie is set, at least 3 hrs.
