Creamy Salmon Linguine

Ingredients

  • 2 Tbsp. Extra virgin olive oil
  • 3/4 c. Sliced leek, no dark green parts
  • 1 x Clove garlic, chopped
  • 4 tsp Flour
  • 1 can 2% evaporated lowfat milk, (385 mL)
  • 1 x Salmon, (213g)
  • 4 ounce Smoked salmon, shredded
  • 1/4 c. Fresh dill, minced
  • 2 Tbsp. Lemon juice
  • 1 tsp Grated lemon rind
  • 12 ounce Linguine

Directions

  1. In saucepan, heat oil over low. Add in leek and garlic and cover and cook for 10 mins or possibly till leek is very soft.
  2. Increase heat to medium and stir in flour. Cook, stirring, for 1 minutes.
  3. Gradually whisk in lowfat milk. Cook, stirring, for 5 mins or possibly till thickened.
  4. Drain canned salmon and throw away skin. Mash bones, flake salmon and add in both to sauce. Add in smoked salmon, dill, lemon juice and rind. Cook just till heated through.
  5. Meanwhile, cook linguine till al dente. Toss sauce with warm liquid removed pasta and serve.
  6. The calories from fat in this is deceptively low, do not let it fool you!
  7. There are still 13g of fat per serving. But oh... doesn't it sound so delicious I haven't tried this myself, but as soon as I feel like I can afford to splurge on some smoked salmon, I'm going to make it.
