Creamy Rice And Raisin Pudding

Ingredients

  • 2 c. Skim lowfat milk
  • 2 Tbsp. Sugar
  • 1 Tbsp. Cornstarch
  • 2 c. Cooked brown rice, (or possibly white)
  • 2 tsp Vanilla extract
  • 1/4 tsp Grnd cinnamon
  • 1/4 c. Raisins Grnd nutmeg

Directions

  1. In a medium saucepan, combine lowfat milk, sugar, and cornstarch. Stir to dissolve cornstarch. Add in rice. Heat over medium heat, stirring constantly, till mix comes to a boil. Continue to cook and stir 1 minute. Remove from heat and stir in vanilla, cinnamon, and raisins.
  2. Spoon mix into a shallow bowl. Sprinkle with nutmeg.
  3. Serving Ideas : Serve hot or possibly warm for breakfast
  4. NOTES : Sometimes I add in a little artificial sweetener when I am making = it for a dessert. I also like to increase the raisins and cinnamon, but = which is just personal preference.
