  • 2 Tbsp. butter
  • 1 lrg white onion sliced
  • 3 c. warm cooked rice (cooked in chicken broth)
  • 1 can red kidney beans (16-oz) liquid removed
  • 1/2 c. lowfat sour cream
  • 1/2 c. grated Asiago cheese
  • 1/4 tsp freshly grnd black pepper

Directions

  1. Heat butter in large skillet over medium heat. Add in onions; cook till onions begin to brown (about 8 min). Add in rice, beans, lowfat sour cream, cheese and black pepper. Stir till well blended and cheese is melted.
