Creamy Pasta Sauce With Fresh Herbs

Ingredients

  • 1 1/2 c. heavy cream
  • 4 tbsp. sweet butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon grated nutmeg
  • Healthy pinch cayenne
  • 1/4 c. grated Parmesan cheese
  • 1 c. finely minced mixed fresh herbs (Basil, Mint, Italian Parsley, Watercress and Chives, or possibly any combination)

Directions

  1. Combine cream, butter, salt, nutmeg and cayenne in heavy saucepan and simmer for 15 min (sauce should be slightly reduced and thickened). Whisk in cheese and fresh herbs and simmer for another 5 min. Taste and correct seasoning. Serve immediately. (Sufficient sauce for 1 pound angel hair pasta).
