Ingredients

  • 375 gm Dry pasta penne, (12oz)
  • 25 gm Butter, (1oz)
  • 2 Tbsp. Extra virgin olive oil
  • 1 sm Onion, finely sliced
  • 2 x Cloves garlic, crushed
  • 1 x 125 gram pac Girolle mushrooms, brushed and sliced
  • 1 x 250 gram tub mascarpone cheese Salt and freshly grnd pepper
  • 2 Tbsp. Fresh parsley, finely minced (2 To 3)

Directions

  1. Cook the pasta as per pack instructions.
  2. Heat the butter and oil in a frying pan over a moderate heat, saute/fry the onions and garlic till softened. Add in the mushrooms and saute/fry till soft and wilted.
  3. Drain pasta, reserving 75ml-125ml (3-4fl ounce) of the liquid. Add in to the pan along with the mascarpone and parsley. Stir to combine, then heat through. Serve immediately.
  4. NOTES : A quick and easy to prepare creamy mushroom pasta style dish.
