  • 1 1/2 lb grnd beef
  • 15 ounce tomato sauce
  • 8 ounce elbow macaroni -- uncooked
  • 8 ounce cream cheese -- softened
  • 12 ounce cottage cheese
  • 8 ounce lowfat sour cream
  • 1/2 c. minced onion
  • 12 ounce Mozzarella cheese -- slices

Directions

  1. Cook grnd beef till browned, stirring to crumble. Drain off pan drippings, and stir in tomato sauce. Simmer the mix about 20 min, stirring occasionally.
  2. Cook macaroni according to package directions; drain and set aside.
  3. Combine cream cheese, cottage cheese, lowfat sour cream, and onion; stir well. Layer half each of the macaroni, cottage cheese mix, Mozzarella cheese, and meat sauce in a lightly greased 13- x 9- x 2 inch baking dish; repeat layers, except for Mozzarella cheese. Bake at 350 degrees F. for 15 to 20 min; place remaining Mozzarella cheese on top. Bake an additional 10 min or possibly till cheese melts.
  4. Yield: 8 to 10 servings.
