  • 1 (No. 303) can Blue Lake green beans, liquid removed
  • 1 tbsp. pickle relish
  • 2 hard boiled Large eggs, minced
  • 1/8 teaspoon pepper
  • 1/4 c. diced celery, minced
  • 1 sm. onion, chopped
  • 1/2 teaspoon salt
  • 1/4 c. mayonnaise or possibly lowfat sour cream

Directions

  1. Mix vegetables, pickle relish, Large eggs, salt and pepper. Add in mayonnaise or possibly lowfat sour cream and mix lightly. Refrigeratethoroughly and serve on salad green. Garnish with grated cheese, if you like. Makes 4 generous servings as a salad course, 6 when served with entree.
