Ingredients

  • Creamy Beet Salad Creamy Beet Salad
  • 4 medium beets*
  • 1/4 cup red onion, finely diced
  • 4-5 T olive oil style mayonnaise
  • 1/4 t salt
  • 1/8 t pepper
  • 1 t sugar
  • 1 T red wine vinegar
  • Wash beets, remove greens*
  • Boil beets with skin on for about 1 hour or until easily pierced with a fork
  • Drain, rinse under running cold water
  • When beets are cool enough to handle, peel skin off, using a mandolin or julienne beets into thin matchsticks
