Creamed chicken over mashed potatoes Recipe

  • For potatoes:
  • 6 large potatoes
  • 1/2 cup warm milk
  • 1/4 cup butter or margarine
  • 3/4 teaspoon salt
  • Dash pepper
  • For the chicken:
  • 1/2 cup butter
  • 4 Tbsp flour (heaping)
  • 1 1/2 cups milk
  • 1 rotisserie chicken meat removed and broken into bite size chunks or 2 cans chicken
  • 1 small bag of frozen peas or other green vegetable

Directions

  1. Wash and peel 6 large potatoes. Bring them to a boil and cook until they are soft.
  2. While the potatoes are boiling, begin making the cream sauce. Melt one half cup of butter in a large sauce pan. In a bowl mix four heaping tablespoons of flour with one and a half cups of milk. Beat with a whisk until all the lumps of flour have disappeared. Then gradually add the milk and flour mixture to the melted butter, beating with the whisk the whole time. Leave on medium heat until the mixture begins to thicken. Add more milk if necessary. About 5 minutes.
  3. Remove chicken meat from rotisserie chicken or open and drain the two cans of chicken. Add the chicken to the cream sauce. Then add one small bag of frozen peas. Stir and cook over low heat about 5 minutes.
  4. Drain and mash the potatoes, slowly adding the butter, milk, salt and pepper to taste, until they are creamy.
  5. Put the cream chicken over the mashed potatoes. Then add salt and pepper serve with a salad and warm bread.

    this is a really great recipe for a cold winter day. I did notice that the flour starts to cook into a dough on the stove though, next time i plan on using a cream of mushroom soup to go in it instead. Over all this is a pretty good recipe, my kids loved it!!
